I know there are several maps of which 1v1, FFA3 or FFA4 even Metalopolis has 6 players FFA. Honestly I'd stikc to 1v1 although if too easy may make 6 players game. Are there any other new maps besides those? I saw there will be lava terrain in the future not sure if in beta, is there a snow terrain?
All of the available maps have been cracked. If you can't find it here, it likely doesn't exist. This will probably be so until the Galaxy Editor is released.

Blizzard has already previewed some new maps for one of the upcoming patches :)

FFA games are easier than 1v1 games. They just take longer. I don't know about the new maps, but if 1v1 AI is too easy, try the cheat version AI's.
